“Sien jy daardie? Dit is propolis,” sê Walter Thornhill terwyl sy assistent, MangalisoTwala, die taai bruin stof van ’n byekorf se raam afskraap. Dit lyk na iets tussen was en harpuis. “Ek wou nog altyd my hand waag aan byeboerdery, maar het net nog nooit die tyd of plek daarvoor gehad nie,” sê hy terwyl hy ’n heuningkoek van ’n korf se raam verwyder, skryf Hancu Louw.Wat as ’n stokperdjie begin het, het tot ’n besigheid ontwikkel, en vandag sien Walter om na meer as 180 korwe reg oor die Laeveld en selfs so ver as die Wieg van die Mensdom in Gauteng. “Ek bestuur die korwe namens ander boere en grondeienaars wat óf bestuiwers óf heuning óf albei wil hê.”Saam met die inkomste wat hy genereer deur korwe te bestuur verkoop Walter ook organiese heuning en propolis, ’n stof wat bye maak wat nie net antioksidante bevat nie, maar ook oor anti-mikrobiese, anti-inflammatoriese en anti-virale eienskappe beskik. Danksy Walter se toewyding tot organiese boerderypraktyke op Bardolino produseer sy korwe heuning sonder enige insekdoders en ander skadelike chemiese stowwe. “Dit is belangrik om te onthou dat dit nie my heuning is nie. Ek het baie min daarmee te doen; dit gaan alles oor waar die bye werk,” sê hy oor die heuning wat die Honey Judges & Stewards Guild of South Africa aangewys het as die beste in die land by die 2025 World Mead Day & Honey Festival wat in Augustus 2025 by Bardolino gehou is.“Die bye is vir my ’n fantastiese groeiproses, en dit het bygedra tot die volhoubaarheid van die plaas – in terme van die omgewing én die besigheid wat dit skep,” sê hy.Die bye het gelei tot nóg een van Walter se tydverdrywe, een wat ook ’n besigheid geword het: die maak van heuningbier, bekend as mead. “Ek wou so min as moontlik vermors,” sê hy. “As ons die heuningoes-toerusting skoonmaak, bly daar ’n groot klomp vloeistof agter wat ek net as heuningwater kan beskryf.”Omdat hy dit nie wou laat verlore gaan nie, het Walter begin kyk hoe dit gebruik kan word. “Heuningbier was die volgende logiese stap,” sê hy, “en ek het aan die werk gespring.” Vandag produseer Walter elke jaar ’n taamlike hoeveelheid heuningbier, en sy toewyding tot dié kuns het hom die eerste prys besorg in vanjaar se kompetisie van die SA Mead Masters Association wat op Bardolino gehou is.
